Monday Nite Supper Club

This is this weeks menu:

Cranberry Chicken
Ingredients: 6 boneless, skinless, chicken breasts, whole cranberry sauce, 1 packet of Lipton Onion Soup Mix, 4oz of French Dressing
Directions:
combine soup mix, cranberry sauce and french dressing in bowl, mix well
pour 1/4 of mix in bottom of casserole dish
place chicken breasts (1 layer) in dish, cover with remaining mix
cook at 375 for approx. 1 hour


Strawberry and Spinach Salad

Ingredients:
1 bunch spinach, rinsed
10 large strawberries, sliced
1/2 cup white sugar
1 teaspoon salt
1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds
Directions:
In a large bowl, mix the spinach and strawberries.
In a blender, place the sugar, salt, vinegar, and oil, and blend until smooth. Stir in the poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Warm Nutty Brownie

Ingredients:
1 pkg semi-sweet chocolate morsels, divided
1 pkg (18-21oz) brownie mix (plus ingredients to make cake-like brownies)
3/4 cup packed brown sugar (divided)
1 cup mixed nuts (divided)
5 rolls Rolos candys
Directions:
Grease pan, chop 1 1/2 cups of chocolate morsels
Combine brownie mix, water, oil, eggs and 1/4 cup of the brown sugar, mix well
Fold in chopped chocolate
Pour batter in pan
Set aside

Chop nuts
Combine half of the nuts and remaining 1/2 cup brown sugar; sprinkle evenly over brownie batter in pan
Bake at 375 for 20-22 min

Meanwhile, cut 16 Rolos in quartersm, set aside
Place remaining 1/2 cup chocolate morsels in microwave safe bowl. Microwave on High 1 min or until melted. Spoon melted chocolate into ziploc bag and set aside

Remove cooked brownie from oven
Immediatly press remaining 24 Rolos evenly into brownie in 4 rows of 6 Rolos each
Sprinkle quartered Rolos and remaining nuts over brownies.
Drizzle bag of chocolate evenly over brownies
